Hearty ginger-beef stew

I love a good beef stew, but was wanting to make it a little lighter (and the kids are tired of me cooking with beer), so I went with a well crafted Ginger Beer from Reed's as the flavor base.  The ginger zip is an amazing addition that cuts through all of the heaviness of the beef and marries quite well with the flavors.  Give this a try, you'll love it.

Fatboy Heaven Ginger Beef Stew

A hearty non-traditional take on a classic Beef Stew. Replacing the beer with Reed's Strong Ginger Beer adds a whole new dimension to the flavor profile.

INGREDIENTS

    • 2 lbs Beef Stew meat
    • 3 tbs Olive oil
    • 1/2 cup flour
    • 1 bottle (12oz) Reed's Strong Ginger Beer
    • 1 cup diced onion
    • 3 ribs Celery, chopped rough
    • 2 large carrots, sliced
    • 4 cups Beef Broth
    • 1 tsp parsley flakes
    • 1 tsp oregano
    • 2 tsp Cajun seasoning
    • 1 tbs Fennel Seed
    • 1 sprig fresh rosemary
    • 2 lbs potatoes, diced

INSTRUCTIONS

    1. Add oil to large dutch oven
    2. When oil is hot, add beef to pot and brown on all sides (6-8 minutes)
    3. Add flour and stir to coat, cooking for 3-5 minutes until all flour is cooked onto meat
    4. Deglaze pan with ginger beer, scraping to get all browned flour off of bottom of the pan
    5. Add vegetables (except potatoes) and cook until softened
    6. Add beef stock, spices, and garlic
    7. Simmer for 3-5 hours
    8. Add potatoes and continue to cook until they are fork tender
    9. Serve
