Pepperoni Corn Bread

The wife and I came up with something new for Dinner tonight.


1lb Sandwich size Pepperoni
1 pkg. Bob's Red Mill Gluten Free Cornbread Mix
10oz Tillamok Medium Cheddar Cheese

1. Prepare cornbread mix according to directions
2. Pour half of the mix into pan
3. Add pepperoni and cheese
4. Add remainder of cornbread mix
5. Bake for 35 minutes at 350 degrees
6. After 25 minutes, add more cheese to top of cornbread, bake for balance of time.

Freaking Amazing, if the fat boy must say so himself!
