I was at the store trying to decide what to do for dinner and found pork tenderloin on sale, so decided that would be the protein.  I wasn't feeling overly ambitious, so decided to do a take on pork and applesauce.  The fresh ginger and garlic really help balance with the sweetness of the applesauce to make amazing flavor and a great pan sauce.  I always like to do the potatoes in the same roaster as my main dish so that the flavors blend and the potatoes stay moist.  Give this one a try, it will be in heavy rotation around our house.

Sweet Apple pork roast with new potatoes

A sweet and savory glaze over a pork tenderloin, served with pan roasted new potatoes is great for any cool evening. The ginger and garlic are key to smooth this across the palate.

INGREDIENTS

    • 1 1/2 to 2 lb Boneless Pork Tenderloin
    • 6 to 8 cloves chopped garlic
    • Seasoning salt to taste
    • 1/2 tbsp olive oil
    • 1/2 cup Unsweetened Cinnamon Apple Sauce
    • 2/3 cup Light Brown Sugar
    • 1 tbsp Fresh Ginger, minced
    • 2 to 4 lb New Potatoes
    • 1/3 cup Butter

INSTRUCTIONS

    1. Pre neat oven to 325°
    2. In large baking dish or Dutch Oven place pork
    3. Rub with mixture of garlic and olive oil
    4. Sprinkle with seasoning salt
    5. Mix Ginger, sugar, and apple sauce thoroughly and pour over pork
    6. Cut potatoes into 1/2" chunks and place around roast
    7. Cut butter into small chunks and place evenly over potatoes
    8. Sprinkle with fresh ground pepper and seasoning salt
    9. Cover, cook in 325° oven for an hour or until internal temp of meat is above 145°F
